It is a linear polysaccharide obtained as a result of deacetylation of chitin, which is the main component of shellfish, found in the shells of arthropods such as crab, shrimp and lobster, and in the cell walls of some bacteria and fungi, the second most common biopolymer in the world after cellulose.
